Peanut butter cookies

Time for something yummy and fun all rolled up together in a delicious little cookie. In our family we are still trying to make small changes here and there when it comes to the foods we eat. These simple recipes that don’t require a lot of ingredients are not only better for us but they save a lot of time and money as well. This is another one of those recipes that I looked up real quick online one day when my family was asking for peanut butter cookies. It also just happens that all the ingredients for this recipe were already on our shelves in our pantry. I am not a big fan of driving to the store for one item. I have my old recipe of criss cross peanut butter cookies but that one requires white sugar, and shortening, two things we are trying to either cut out of our life completely or at least limit to small amounts. Hope you all like this one.

You will need:

1/2 cup peanut butter

1/3 cup flour

1/4 teaspoon baking soda

1/4 cup honey

1/2 teaspoon pure vanilla extract

1 egg

Chocolate chips, either semi sweet or dark chocolate (optional) The original recipe online did not call for chocolate, just me adding a pinch of something extra.

First, get all your ingredients together making sure you do have them in your home. I remember once starting up a batch of cookies at Christmas time and not having two key ingredients in our house. That one did require a quick trip to the store and let me tell you, it was busy out there at that time. We live in the middle of a very busy city.

This recipe calls for honey in place of white sugar and shortening. We always have plenty of that in our home.

Make sure to mix wet ingredients first. Sometimes if I get distracted because someone ask me questions in the middle of following a recipe I will miss an ingredient and that is usually something small like vanilla extract. That vanilla really adds a punch, you can tell when it isn’t there.

After you have mixed all the wet ingredients add the dry.

I had to add a little more flour to this recipe because the honey I used was not very thick. I should have stirred the honey up some more. If your recipe is too wet you will not be able to roll your cookie dough into little balls, so you be the judge when it comes to that.

Flatten your cookie dough balls.

Then criss cross with a fork

I placed my cookies on silpat sheets but parchment paper works too, then baked them in an oven at 350F for 7-9 minutes.

For a peanut butter cup flavor (what my kids said the cookies tasted like) just add three chocolate chips on tops before baking. They do taste a little like peanut butter cups. Better then peanut butter cups because with these cookies you know what the ingredients are. You won’t feel guilty feeding these treats to the ones you love. So make it yourself, your family/friends will love you for it.

Please keep a friend of mine in your prayers and well wishes. Rod is going into surgery for his heart. His wife just let me know the other day. Up north where we have our Little Red House they have to helicopter people out of town since there are no hospitals around, no doctors either. It is in the middle of nowhere. A couple nights ago they had to helicopter Rod out. So please keep Liz and Rod in your prayers…thank you.

  2. I LOVE peanut butter cookies. You could also use a little Nutella instead of the chocolate chips to give it a little something extra. YUM!

    1. I have never tried that, thank you. We always have Nutella in our home. My husband grew up on that stuff.
