Cactus tacos

This isn’t one of those fancy recipes so it shouldn’t be too hard, especially if I can put it together. Just a quick meal that we make every now and then. They are cactus tacos which are made from Nopales cacti but you may know them as prickly pear cacti. You can grow your own prickly pear or buy it prepared from most stores in the southwest. If you grow your own you will have to remove all the thorns and outer skin before you prepare them.  Here is a link to how to do that on YouTube

 

They are kind of like a mix between green beans and bell peppers together.

Nopales cacti have so many benefits to them which are:

Aids in weight loss

Anti cancer potential

Heart health

Improves digestion

Skin health

Boost immune system

Builds strong bones

Treats insomnia

Reduces inflammation in body

 

I just used a tablespoon of the cacti to a corn tortilla, added some enchilada red sauce and about a tablespoon of shredded cheese.

My husband makes his own sauces, hopefully I will have some more time to do a more detailed post on that when he makes some later.Although with some of his sauces he keeps things a secret from outside the family. I think they are family recipes passed down from the Italian side.

On a cast iron pan I added a little oil and heated the tortillas up with all ingredients listed above in it. Then I folded one side over and flipped each side to cook a little more.

After I cooked the tacos I added lettuce, tomatoes, and onions. You can add avocados, more peppers, black beans, rice…tacos are fun like that. I have even made green chilli and cheese tacos when in a hurry and the family is hungry for something quick and easy.

Our side dishes were brown rice and pinto/black beans. This was really inexpensive to make, each dish was under $3 to make ourselves.Plus all these colorful ingredients are good for us.

We also bake our own tortilla chips to cut back on oils and salts. The ones premade in the bags are special treats we have occasionally, otherwise we just take corn tortillas and cut them into triangles and bake ourselves then add then to a big paper bag.

We love going out to eat but that can get expensive for a family of four.It can cost up to $50 for these plates of food we make ourselves. Nothing wrong with a treat out now and then but if you are trying to stick to a budget then it is also fun being creative making up your own types of combination plates.

There are over 400 plants in the Sonora desert that are edible. Look into the area you live in, God has all kinds of food out there in our world just waiting for us if we know what to grow and look for. Research plants and which ones are edible. I remember once my husband and a chef at his aunt’s villa in Tuscany had to make lunch for some guest and they did not have any greens. They just went out and found supplies to make a salad with items growing out in the wild. A plate of pasta added to it and it was really good meal.

I am very good at preparing ingredients already here but it is my husband who has the real talents when it comes to cooking, we all have our gifts. Use them and share them with others as much as possible. Happy cooking everyone.

    1. Thank you Eliza, I hope you get to try making some, they are yummy to us but sometimes people don’t like the texture. They do taste good though.

    1. Thank you Tanya. Don’t know about your area but we have a bit of a shortage here with meat in our area. We were never really bug meat eaters here but sometimes we will have meat dishes like once or twice a month. If you are short on meat there are always veggie tacos which are just as good to me.

    1. Some are but you have to make sure you get the right kind if you are growing them in your garden. They are actually pretty good, just like eating another type of vegatable.

    I’d been wondering what people use nopales for! I’ve seen them a few times in our local market, but eating cacti has always kind of scared me. This looks really good, though. I just wonder if that bin has been picked clean like most everything else by now. Well, maybe something to try when we’re released from our homes. One day.

    1. Yeah, I know what you mean. We are just over a week and I am already feeling a little stir crazy. It is like when someone tells us you can’t eat something because it isn’t healthy for you and then that’s all you want. The hiking trails here in Arizona are like lines at Disneyland and that’s not hiking or social distancing at that matter. Some people are not taking this seriously. You and your family stay safe. Eventually we will be out there getting our veggies and fruit again, I am missing that.

    1. Thank you Lisa, they are a lot healthier for us when we don’t fry them and add a bunch of salt. Make some yummy dips and salsa to go with them and they are extra yummy. I make homemade salsa and guacamole and my husband makes Hummus and bean dips. Sometimes for a meal we will have a Nacho night. Just have bowls of different items out like green onions, cilantro,cheese tomatoes, ground beef with taco seasoning added, beans, rice and salsa. When our children were little this was a fun way to get them to try veggies since they had more control over making their own plate of nachos. They had to at least try each vegetable. Of course they never liked onions so I cut them up really small and added them to the homemade salsa and they ate that stuff up as long as it was disguised of course. Hope all is well with your move and there is no stress, it will be back to normal hopefully soon.

    These look incredible and I adore how you mentioned the way in which God placed healing foods and medicinal plants all over this great big world for us to enjoy and live well with. We too believe in living as naturally as possible. God didn’t make any mistakes. Everything has a purpose!

    1. I love seeing your visits here, you always add so much cheer to all us bloggers out there and we need that. Yes, God doesn’t make mistakes and he has so many plants and gifts he gives us every day. We are tucked away in our homes during this two week quarantine to save lives out there. I have enough supplies for at least a month, so that is what we will be doing, staying home. We did not have fresh greens though just canned and frozen. Then the other morning I saw all our grape leaves are coming out. It looks so pretty. Like they came out just in time when we would need them, so many vitamins in grape leaves. Grape leaves are also high in fiber and can be eaten raw (we don’t use pesticides) so I collected some leaves and we added them to our food last night. In place of lettuce on our bean veggie burgers we had grape leaves. All these gifts from God, they were always there, just sometimes we get distracted and never realized it. I will keep you and yours, and the whole world in my prayers. Stay safe out there, as I know you will because God is always by our sides.

      1. I bet they were yummy, I will have to share that with my husband and try it sometime. Just got home from a morning of pandemic shopping for food. In Arizona our numbers keep climbing so it is a little strange shopping now days. We add salsa, lettuce and cheese, and avocados if we have them available. Everyone just kind of does their own thing when they make up their tacos. Oh, and thank you for the photo compliment. That is my favorite part to bogging, taking photos.

        Oooh, I’ve never tried that. Not into onions much, but that sounds interesting. I do the usual–spinach, tomato, avocado, cheese, rice, a corn salsa, regular salsa, green olives, and sometimes banana peppers or jalapeños.

  9. What an awesome flavor / texture combo! I stinkin’ love vegan, vegetarian, and alt tacos, and I’d never tried cactus. One of my all-time favs was black beans, feta, and pickled red onion.

    1. Wow, thank you. I never thought of myself as a pro, that is so kind of you to write. Just visited your site and am now a new follower. Great post you shared. It is hard getting starting when you first start blogging. I remember writing up all kinds of fun posts and only getting maybe one or two followers. It is fun though and you eventually meet a lot of cool people from around the world. I love any kind of taco but my favorites are the veggie ones. When we make black bean tacos we add avocados, salsa, cabbage or lettuce…we have even cut up grape leaves from our garden to add to them. My son and daughter love cheese with their tacos too. Sometimes my husband has one of his “Secret recipe” sauce mixes from peppers he grows and we will add that to the tacos as well. Tacos are the best meals when you have a large group of people to feed and everyone has their own unique food they love to add. Who doesn’t love a taco party.
