A different take on the traditional gingerbread houses. Got the idea from a boxed Oreo house kit from the holidays. They were sold out at the store at the time so we made one ourselves after looking up the recipe for Oreo cookies. The cookies did not come out like the store bought Oreos but they were still yummy in their own way. Too soft my son would say when I tried passing them off as the new Oreo. The recipe down below is not mine. I forgot where it came from.
As always, I did not follow the directions completely. Instead of dark cocoa I only had regular cocoa. I also didn’t roll and refrigerate like the instructions said. I just rolled up into a huge ball and let it chill for a bit, then I rolled out and used a small jar lid to cut out the cookies shapes. I have a gingerbread house cookie cutter kit to use when I make the houses, two sizes in fact. If you don’t have one yourself you can order online or search out a free template for a house. If you still can’t find a pattern you may have to draw one out yourself. Just make sure to use a ruler otherwise your home will be lopsided. I have done plenty of Dr. Seuss type houses for my kids while they grew up. Also we did not have powdered sugar at the time for the cream filling. I had used it up for the real gingerbread house around Christmas time. My daughter used store bought vanilla frosting instead.
1 cup unsalted butter softened.
2 cups of flour
1 cup white sugar
2 teaspoons salt
2 large eggs
1 1/4 cup of dark Cocoa powder.
1/2 teaspoon baking soda
Cream filling recipe:
1/2 cup butter softened
2 cups powdered sugar
1 teaspoon vanilla
In large bowl cream together 1 cup of butter with white sugar and salt until fluffy. Beat in eggs. Mix flour, cocoa powder, and baking soda and blend together really well. Then add dry ingredients to the wet ingredients. Turn dough out onto your surface and push together into a flat square. Wrap dough in plastic wrap and refrigerate for an hour.
Preheat oven to 325F.
Remove dough from fridge and roll out. Cut shapes then bake in preheated oven for 15 minutes.
