A left over fruit cake.

If you just happen to be cleaning out your fridge and come across fruit that is still okay but will not be in a couple of days then a fruit cake is a good way to turn those left over cut up apples or fruit in your fridge into a yummy fruit cake. I had apples and peaches in my fridge. They were a couple days away from the chickens having a treat filled day of fruit snacks.

Ingredients:

1 ½ cups all purpose flour

½ tsp salt

1 1/2 tsp. Baking powder

1 cup sugar

2 eggs

¼ cup sour cream or plain yogurt

¾ cup unsalted butter at room temperature

1 tablespoon vanilla

2 cups of fruit

Mix all dry ingredients first, but leave sugar to cream together with softened butter later. After mixing butter and sugar together add eggs one at a time and mix, then add vanilla. Mix wet ingredients until fluffy, then slowly add dry ingredients a little at a time, once that is all mixed slowly fold in fruit. In buttered round cake pan or lined with parchment paper bake cake at 350F for 45 minutes or until pick comes out clean.

After cake cools sprinkle some powdered sugar to top. I did a two layer cake and I also added walnuts to the top of my cake. In between the two cake layers I added some apricot jam. Pretty easy and it saved some left overs from being tossed to the chickens. In a couple days those left overs would have been a Chicken treat for sure. And now they were made into a treat for the family.

I also experimented with a no white sugar cake and no oil. I used apple sauce instead of oil and it was made with oats instead of flour, in place of sugar I used fruit and honey. But then I used some real apricot jam for the top so there was a little sugar in that. I forget the exact recipe but there are so many No sugar/oil/flour type deserts online you can research and find all kinds of things to bake and make.
