
I’ve been trying to bake healthier meals for my family. I found a recipe online for peanut butter muffins and being that I had peanut butter in the house already, I decided this would be my experimental baked item for the week.
Last month I baked fruit hand pies and I also baked pumpkin muffins as I had some canned pumpkin left from the holidays. Those were a hit and after I baked the peanut butter muffins they were a hit too. You know they are good when people ask for the recipe and want to know how to make them themselves.

This is what you will need: 1 1/3 cups of whole wheat flour, you can use all purpose flour in place of but they won’t be as healthy, or you could use half whole wheat and half all purpose. 1 teaspoon ground cinnamon, 1 teaspoon baking soda, 1 teaspoon baking powder (I use aluminum free powder) 1/4 teaspoon of salt, 1 cup honey, or 1/2 cup honey and 1/2 of maple syrup. 1/2 cup Greek yogurt, 2 Tablespoons of melted coconut oil, 1 large egg room temperature, 1/3 cup milk, 1/2 cup creamy peanut butter.
We made the peanut butter ourselves since most of the brand peanut butters on the shelves have preservatives and other harmful chemicals in them. I believe most of the cheaper brands aren’t even peanut butter, they’re mostly a creamy white fat called shortening, which you can also find in a very popular black and white cookie too. They just disguise the flavor of shortening by adding lots of sugar and other flavors to it.

You can make your own peanut butter by buying whole peanuts, not sugar coated. Blend the peanuts in your mixture grinding them down, there you go…peanut butter. It’s pretty simple and much better for you doing it the natural way. Some people add honey but we just leave ours plain.
We are trying to experiment with growing peanuts to have more control. I don’t care what kind of silk wood standards of “Safe” amounts they tell us these so called ingredients are for us. Just look around at all the sickness and cancer everywhere…some of us actually have our eyes opened.
Don’t you think it’s weird when politicians start eating the same type of salty crunchy snacks, even bringing up how much they love eating that brand of tortilla chips with the oh so yummy cheese flavor, all the time. Sometimes I feel like I’m in that Truman show.
The grocery stores could put healthier items on their shelves and why do they need to add so much sugar to everything? I think we all know why…greed.
The Tobacco companies have switched gears and now are in charge of the food companies , so instead of making tobacco addictive they are making food addictive by adding the most addictive item out there to everything…sugar.
This is beyond evil to me. So being a mom, I try the best I can to find foods that are safe for my family, sadly this is not so easy in America.

It’s made almost impossible in my country, but you can lessen the amounts of poisons that you do put into your body, which means no rainbow colored chocolate covered peanuts, no matter how cute their cartoon characters look on TV . And I would also stay away from those black and white cookies and orange cheesy tortilla chips that all the politicians and stars say they love. I don’t care how famous someone is that eats them.
Preheat oven to 425F, then in medium bowl whisk flour, cinnamon, baking soda, baking powder, and salt. Then mash the bananas and stir in the honey, yogurt, coconut oil, egg, and milk. Then add peanut butter and vanilla extract until smooth. Pour in the dry ingredients and stir gently until just combined. Try not to over stir the muffin batter. You can fold in chocolate chips if you want. If you are cutting back on sugar though, try to find low sugar chocolate chips if you can.
Bake 5 minutes at 425F then keeping muffins in oven, reduce heat to 350F for an additional 15 minutes . Drizzle top of muffins with melted peanut butter. You can also add some home made jelly to your muffins like a peanut butter and jelly sandwich.

Here is another low sugar muffin to try- Apple Muffins
3/4 cup of whole wheat flour (or all purpose flour, you choose) 1 teaspoon baking powder, 1/8 teaspoon salt, 1/2 teaspoon cinnamon, 1/2 cup smashed blueberries ( I didn’t smash mine but that’s what the recipe called for), 1/2 cup milk, 1 egg, 1 teaspoon of vanilla extract, 1/2 cup apples (peeled and finely chopped).
Whisk all dry ingredients in a large bowl together. In another bowl mix all wet ingredients, then add to dry ingredients and mix well. Line a muffin pan with paper muffin cups, fill to top, bake at 400F for 11-15 minutes. Test to make sure they are cooked through with the toothpick. Let cool.
I added 2 tablespoons of our natural honey from our bees for extra sweetness. I also sprinkle some oats to the tops.

We have homemade berry jams to add to muffins if anyone wants even more fruity sweetness. Happy baking everyone.
