DIY pickles

You will need:

White vinegar

water

your own preferred spice mixes

dill

peppercorns

green onions (optional)

garlic cloves

salt

Kirby cucumbers or any variety of small cucumbers.

Hot peppers (optional)

To prepare the brine- 2 cups of vinegar, 3 cups water, 2 tablespoons of salt and mixture of spices you like. Bring to boil, then lower heat and let simmer for about 10 minutes, then let cool.

Cut up cucumber and in a glass jar add all ingredients you want to pickle. I added about a teaspoon of dill.

Some people add baby onions, carrots, peppers and cloves of garlic.

Then pack everything into a glass jar then pour brine over it all until all ingredients inside are submerged. Tap it to remove any air bubbles then add lid and store in fridge. They should store for up to two months.
